When you live on the Gulf Coast it is customary to check the weather forecast while you are drinking your first cup of coffee. This morning, I looked at the the path of "Sally" to see what to expect as the storm moves closer to land. By the time you read this blog its effects will be rolling on shore.
Wind, rain and power outages are common during these hurricane events. My beloved Dauphin Island will help mitigate some of the dire effects for those of us living in Mobile. This barrier island is our frontline of defense.
I was down there last Monday celebrating Labor Day with friends. We toured the island via boat, enjoying the calm waters in the Bay.
Hopefully, damage to this little gem will be minimal.
Hurricanes are part of our existence along the Gulf and our calendars have to remain flexible during the season. Today was supposed to be a very busy one for me. Now I am rescheduling appointments and crossing my fingers that we don't lose power.

Food trucks have become a BIG part of the culture along the Coast. Lacey Watson, owner of Kyle's Kitchen offers incredible options for folks on the go! Her Turkey Ham Tumble Wrap is my all time favorite! She offers pulled pork paninis, fantastic grilled cheese sandwiches and so much more. As fall approaches, she plans to bring back her famous tomato basil soup! I can't wait!!!
In addition to all of the savory options, she is the creative genius behind marvelous sweet treats! Lacey's Cakes serves up incredible cupcakes (best I have EVER had), cake, pie, brownies and so much more! She even ships if you want to treat a loved one to unforgettable goodies!

Chicken Noodle Soup
Here is a tried & true Chicken Noodle Soup recipe that is perfect for those days when you are feeling a little under the weather. It goes together in minutes, and is even tastier the next day! I have had my soup pot out these past two weeks! I am so ready for cooler temperatures!
I used precooked rotisserie chicken from Costco to shorten the prep time. Serve it hot with some crusty bread on the side!
Ingredients:
1 TBP of butter
1/2 diced onion
1/2 cup of diced celery
1 1/2 cup of diced, cooked chicken
8 cups of chicken broth
1 1/2 cup of pasta (I use organic Casarecce)
1/2 cup or more of sliced carrots (raw)
1/2 teaspoon of thyme
1/2 teaspoon of oregano
Salt & Pepper to taste
Melt butter in a stock pot, saute onion & celery about 5 minutes or until they soften. Add stock, chicken, carrots, seasonings, pasta and bring to boil. Simmer for 20 minutes, serve hot.
