Thanksgiving: Being Grateful!

Are you wrapped up in preparation for the upcoming Thanksgiving holidays? Recipes are being pulled out of favorite books and groceries are being bought (making groceries if you are from South Louisiana). What are you preparing for your family and friends? A standard on my menu is my mother's yeast rolls, called Annie Rolls. The backstory is that my sister, Mary, was away at camp and fell in love with the delicious rolls that the cook, Annie, made for the campers. Mother was able to convince her to share the recipe and a tradition was born. They are served hot with melted butter and are a favorite on the menu. Here is the recipe for you to use and start your own delightful custom for your family!

Annie Rolls

Ingredients:

  • 1 cup of boiling water

  • 1 cup of butter (mom used 1/2 shortening however I tried butter and they are fantastic)

  • 7/8 cup of sugar

  • 1 1/2 tsp of salt

  • 2 compressed yeast

  • 2 eggs

  • 7 cups of All Purpose Flour

Instructions:

Pour boiling water over butter, sugar & salt. Meanwhile activate the yeast in 1 cup of warm water for about 5 minutes. (Hint: you can add a sprinkle of sugar to the warm water to feed the yeast).

Beat two eggs and add to cooled butter mixture. Add activated yeast.

Next gradually add in 61/2 to 7 cups of sifted flour. ( I use my electric mixer for this).

Blend well then refrigerate covered for at least 4 hours.

Dough will rise significantly.

Roll out on floured surface, knead and then place individual rolls on a baking sheet. Let them rise in a warm location for two hours.

Bake at 350 until golden brown, about 8-10 minutes depending on your oven.

Attention Dog Lovers!

This little Shih Tzu of mine LOVES to go places. I've had some fantastic experiences along the Gulf Coast with restaurants and businesses welcoming him with open arms. (He has been turned away a time or too, however that is rare). I realize that other pet owners want to know where they can and cannot take their fur kids, so I am launching Jack on the Street next week on YouTube. He will explore the Gulf Coast and beyond, giving viewers a peek from a dog's perspective of things to do when you visit our area. I am rolling out his first video with some helpful tips of things you need to take with you when you day trip with your doggie. It is akin to taking a small child somewhere! Click here to subscribe to my channel so you don't miss any of his shenanigans!
