August is a big birthday month in our family; mine included. This year I has headed out of town to celebrate, however the hurricane duo in the Gulf nixed those plans.
I wound up having a wonderful and relaxing day at home. One of the key lessons that I have learned since March is to remain flexible.
Last Friday, friends surprised me with a dinner out at a local seafood restaurant. We sat out on the covered patio overlooking the water. Despite the heat, everyone thoroughly enjoyed the food, the company and being out of the house! I certainly have a new found appreciation for experiences I used to take for granted.
Small dinner parties at your home are a great way to gather with others in a safe environment. I am committed to doing more of that sort of entertaining over the next few months. I miss seeing my family, friends and business partners. Are you looking for ways to reconnect to others? Well, dust off the "good" dishes and invite a couple over for supper. You know you are going to be cooking anyway, so why not?
If you really want to feel GREAT, pack up some food and surprise a neighbor with dinner. I did that last week for someone recovering from surgery. WOW, the love I felt from this couple was incredible. Sometimes we hesitate to do these sorts of things, however we have been given the gift of time. Let's spread some love this week to those around us.
What's New in September?
This week the "boss dogs" met Rebecca Bunkley, owner and groomer at Apollo's Paws in Mobile. The boys left her spa looking fantastic and they are "in love" with her. We all know how important it is to find the right person to groom your dog or cat. Well, look no further, she is incredible.

CFH - Cooking from Home
Last week I wrote about CFH (Cooking from Home) and shared a Cobb Salad with Shrimp concoction. Click here if you are interested in trying it in your kitchen. I got so much positive feedback, I decided to share another yummy recipe. This one is a family favorite meatless dish that can be served with a side salad and crusty French bread. It takes about 10 minutes to prep and bakes for 30.
Cheesy Baked Tortellini
Ingredients:
Olive oil
2 cups marinara sauce
1/3 cup mascarpone cheese (cream cheese works also)
1/4 cup chopped fresh Italian parsley leaves
2 teaspoons chopped fresh thyme leaves
1 pound purchased cheese tortellini (found in refrigerated section of the deli department)
2 ounces thinly sliced smoked mozzarella
1/4 cup freshly grated Parmesan
Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.
Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.
